Healthiest and tastiest….Plant-to-plate!

The PTP is unbeatable in health and taste….we are lucky to have a kitchen garden in which we grow some vegetables, herbs and fruits…..the Plant-to-Plate method is the best to get the maximum nutrition and taste out of anything edible….freshly plucked, cooked instantly and eaten while it is hot….it does not get better than that….our eggplants are merrily providing us a regular supply of eggplants……….we are enjoying the baingan ka bhartha…..the larger eggplants are roasted, the skin peeled away and the pulp is mashed. In a pan, desi ghee is heated, garlic, green chili, onions, turmeric and tomatoes are added and cooked, the mashed eggplant is added and cooked well. Salt is added and the dish is ready!

Great, inexpensive, easily available food

There is a lot of debate over ‘negative calories’ and ‘superfood’. While others dissect the pros and cons, let’s take a look at good food that is rich in anti-oxidants, fiber, vitamins, is easily available and doesn’t cost the earth. While some yummy food groups are either too expensive or frozen and shipped halfway across the world to you, these could grow in your own backyard or be available at a reasonable price in your town or city. At present, we have passion-fruit and strawberries growing in our home….As our ancestors told us “Fresh food wins over Fashionable food’. What are the great things you can eat, enjoy, and have health benefits ? Let’s take a look at some of them:

  1. Spinach-the recipe is given on this website.
  2. Apples-they may actually keep the doctor away!!!!
  3. Carrots
  4. Radish
  5. Almonds
  6. Tomatoes
  7. Lime
  8. Oats
  9. Green tea
  10. Broccoli
  11. Ginger
  12. Garlic
  13. Onion
  14. Spices
  15. Kidney beans
  16. Lentils

  21. Dark chocolate……who cares where this is from, it should have >70% cocoa.                                      If you can add grapefruit, berries, asparagus, good for you, but make sure it’s fresh, not frozen and thawed. Spicing it up-food

I love boiled eggs…..sprayed with freshly ground Himalayan salt and black pepper….with a glass of full fat milk…..and a few tomato and cucumber slices …..yes, bring on the challenges of the day 🙂

Cherry tomatoes.. Our home

Cherry tomatoes grow in bushels in our kitchen garden. They are best eaten raw, in their natural form , the whole tomato is packed with flavour. They contain Lycopene and other antioxidants.

Value of water

1.8 billion people in the world still use contaminated or unsafe water for drinking. Potable or drinking water is a must for health. Every time you turn on your shower, each time you use 65 liters of water to bathe. The water in your taps and showers can be made into drinking water, and can save someone’s life…..

Eggplant flowers and vegetable-our garden

Our garden has a new set of pretty flowers and vegetables…..the eggplant has flowers and ripe vegetables on the same plant…which ensures a steady supply throughout three months!!! The eggplants from our garden are the most delicious I’ve ever eaten……This vegetable has anti-ageing and health-boosting qualities …..it has minerals and vitamins, calcium and iron….among other wonderful ingredients…..

Monday special omelette

For that extra burst of energy, flavour and enthusiasm on a Monday morning….here is what we eat…….

Add sliced onions and strips of chicken/ bacon/ any meat and stir-fry in a small amount of ghee….add cheese strips and green chili….remove from the pan. Beat two eggs and cook them….add the mix previously cooked over the eggs…fold when the eggs are cooked…..enjoy!

For the ‘eggetarians’ (those who eat eggs but not meat…remember, you heard of it for the first time here!). add bell peppers in place of the meat…..

Garnish-raw

Add spice to your food…..raw onions, sliced and diced, tomatoes and green chill and freshly roasted and ground cumin are my favorites….add them to pulses and salads……and yogurt! Clove kept in your mouth for a while after eating will take care of any ‘spicy’ odour 🙂

The sugar we are unaware of

We need carbohydrates, proteins and fat in our diet….it is the proportion that is crucial for each person / gender/ age/ disease!

We do not realize that some sugar may be present in bread, ketchup, salad dressing, sauces…….

Toothpaste and some other products contain sweeteners…..

Be aware, if you can do without ketchup without missing it, maybe you should!!!

Some of the things you can add to an omelette is finely chopped onions, tomatoes and green chili…….giving up something only works for me if I substitute for something tastier…..

Frailty of humanity

We strut about, thinking the universe revolves around us and our loved ones need us…..all it takes in a bout of acute gastroenteritis to realise that we have no control of our body and health….

What does one do??

Ask for help!!!! one can pass out in the washroom if the condition is severe….

Lots of oral rehydration solution

Antibiotics and antacids/ antispasmodics as and when required

Monitor BP, blood sugar, electrolytes…..

Make sure a loved one is with you

Eat, replenish fluids……and hope for the best

One episode of any sudden illness can force us to face our frailty, our expiry date and our priorities…..stay well, stay safe…..
