Our recipe for green chilies

Our backyard has delicious green chilies and seedless lemons all through the year. My mother’s recipe makes them taste amazing.. together ! Freshly squeezed lime juice is added to chopped green chilies in a glass container. A dash of salt is added and the perfect addition to every dish is ready … there are no preservatives so this concoction can be used for 3 days. Green chili has a wonderful flavour and both chilies and lemons are great for health and boost the metabolism!

Halogen air fryer oven

The holiday season is the time for familial bonding and overindulgence in food . One way to enjoy food without excessive calories is to air fry food. My sister and brother-in-law treated us to goodies made in their halogen air fryer oven. Kebabs and grilled snacks can be cooked to perfection. Dust with roasted and ground spices to your taste and enjoy!!imageimageimage

The Cell that holds us captive!

How many remember what life was like before the magical device called the mobile/ cell phone entered our lives???The cell phone is wonderful in so many respects………….

  • Getting help in emergencies
  • Connecting with friends and family
  • Completing professional work through email, calls, etc
  • Navigation
  • Taking pictures

Is there a downside???

  • Children are often given phones to play with, to watch videos, play games…………..heaven knows what deleterious effects the bright images have on young brains and eyes….studies have shown they are harmful…….
  • Radiation…what havoc does it cause???
  • Addiction for games, connecting with social media
  • Stress-induced myopia……

What do we do? how much is too much??? what is the optimal use for a phone???? maybe we should agree to keep them away from children……

Sunday morning breakfast

A Sunday morning is best enjoyed…nay, celebrated…by waking up late…..a leisurely, delicious breakfast is mandatory…..here is what we ate today……an egg sandwich! Boil 2 eggs, mash them up and add 2 dollops of fresh cream (removed from the top later of full-fat milk that has been boiled and cooled), add salt and freshly ground pepper and spread on lightly toasted multigrain bread……enjoyyyyy!

Black rice-Manipur, India

Traditional feasts include black rice desserts in Manipur. The rice is slightly more sticky than white rice and has a different taste. It looks beautiful as it is purple when cooked. it contains Vitamin E, Iron and Anthocyanin. The best variety is always the one that grows closest to you and can be consumed immediately after eating….

Healthiest chocolate

The most sought after food in the world is……….chocolate!!! No wonder, since it has chemicals that are mood-lifters and give one the feeling of being in love….chocolate has Phenylethylamine which imparts the feeling of love and passion, and tryptophan causes the secretion of serotonin which uplifts the mood …………….when something does that to you, and is delicious…….there is no downside. Wait!!! to be healthy it is recommended that dark chocolate should contain a minimum of 70% cocoa……below that, you are loading up on sugar and milk solids…….the 85% and higher percentages of cocoa in chocolate are supposed to be the healthiest, but many people do not enjoy the taste….I love the higher percentages of cocoa…….it is about time that we stop calling the white form of chocolate as chocolate……..indulge, enjoy, the world is a better place with chocolate in it…..

Peas to you…raw green peas with tomato=double the health and taste

Green peas are not expensive, though they are packed with antioxidants and phytonutrients. They have the advantage of being protected in the pod , hence they are safely eaten raw, which is the tastiest and healthiest way to eat them. A polyphenol called coumestrol in peas is believed to protect against stomach cancer. They also contain saponins which help to fight against diabetes, high cholesterol and cancer.

They have a low glycemic index and are high in fibre and proteins. The phenolic acids like ferulic and caffeic acid along with flavonols like catechin and epicatechin in peas enhance their antioxidant and anti-inflammatory quality. They contain omega-3 fats (alpha-linolenic acid or ALA). if you thought that was not enough, they also have beta carotene and Vitamin E. The flowers on the pea plant are beautiful as well. Apart from being good for us, they are good for the soil on which they grow!!!!!

To get the most benefit from peas, shell a cup of them, add a raw chopped tomato and a dash of salt and fresh lemon juice……try it now. The benefits of raw tomato have been discussed earlier in another post….eat a bowl a day.

Healthiest and tastiest….Plant-to-plate!

The PTP is unbeatable in health and taste….we are lucky to have a kitchen garden in which we grow some vegetables, herbs and fruits…..the Plant-to-Plate method is the best to get the maximum nutrition and taste out of anything edible….freshly plucked, cooked instantly and eaten while it is hot….it does not get better than that….our eggplants are merrily providing us a regular supply of eggplants……….we are enjoying the baingan ka bhartha…..the larger eggplants are roasted, the skin peeled away and the pulp is mashed. In a pan, desi ghee is heated, garlic, green chili, onions, turmeric and tomatoes are added and cooked, the mashed eggplant is added and cooked well. Salt is added and the dish is ready!

Great, inexpensive, easily available food

There is a lot of debate over ‘negative calories’ and ‘superfood’. While others dissect the pros and cons, let’s take a look at good food that is rich in anti-oxidants, fiber, vitamins, is easily available and doesn’t cost the earth. While some yummy food groups are either too expensive or frozen and shipped halfway across the world to you, these could grow in your own backyard or be available at a reasonable price in your town or city. At present, we have passion-fruit and strawberries growing in our home….As our ancestors told us “Fresh food wins over Fashionable food’. What are the great things you can eat, enjoy, and have health benefits ? Let’s take a look at some of them:

  1. Spinach-the recipe is given on this website.
  2. Apples-they may actually keep the doctor away!!!!
  3. Carrots
  4. Radish
  5. Almonds
  6. Tomatoes
  7. Lime
  8. Oats
  9. Green tea
  10. Broccoli

  15. Kidney beans

Dark chocolate……who cares where this is from, it should have >70% cocoa.                                      If you can add grapefruit, berries, asparagus, good for you, but make sure it’s fresh, not frozen and thawed. Spicing it up-food

I love boiled eggs…..sprayed with freshly ground Himalayan salt and black pepper….with a glass of full fat milk…..and a few tomato and cucumber slices …..yes, bring on the challenges of the day 🙂
