Paneer paranthas

It’s a great feeling to eat a delicious parantha, but what makes it even more tasty is sharing this experience with family at the start of a day. I’ve eaten too many paranthas, like any other true-blooded Indian, but I rate the paneer parantha as the tastiest.

Take grated cottage cheese (home made is the best kind) add chopped onion, coriander, green chillies, grated ginger, red chili powder, a pinch of dried mango powder and salt to taste. Mix well.

Take kneaded whole wheat flour, roll out into half the size of a thick roti. Place the mixture of paneer generously in the middle. Close it all round, sealing it with your fingertips.

Roll it out gently and place on a hot tawa. Flip it over when it shows signs of being cooked.

Add ghee on it and around it. Flip it over again.

Remove from heat, enjoy it with yoghurt and home made pickle.

For weight watchers : Don’t add ghee, flip it over, heat on direct flame to cook well. Enjoy!
