Spinach-on the go

Spinach is good for health, full of iron, Vitamins A, C, K and minerals. The only problem is making it tasty. The simplest recipe for me is the one given below:


Cut the leaves into small segments and boil with some water. Drain and keep the water for adding it to the cooked vegetable. Chop 2 onions for 500 gms of spinach, take 2 small chopped tomatoes, 3 cloves of garlic, 1 and a half tsps of ginger, 1 tsp of cumin, 2 chopped green chillies and salt to taste.


In a pan, heat 1tbsp of ghee and add the cumin seeds.


After 5 seconds, add the garlic, stir for 10-15 seconds.


Add the chopped ginger, stir for 15 seconds.


Add the chopped onions, stir continuously. Add the green chillies. When the onions are brown, add the chopped tomatoes.


Cook till the tomatoes are fully cooked.


Add the boiled spinach and mix for 60 seconds, add the drained water of the boiled spinach as well, so that no nutrients are lost.
