Start the day with an omelette

Eggs are a great way to start your day. I begin mine with 10 almonds, 2 walnuts, 2 dates, 2 figs, 2 eggs and a glass of milk. I do not take any snacks or beverages till lunch and never feel hungry, in fact I feel energetic and full. An omelette is delicious, especially with onions, tomatoes and green chilies. You can add strips of chicken, cheese,  mushrooms, even a little coriander if you want. I do not like the taste of raw onions, so the onions, tomatoes and green chilies are tossed in a pan to semi-cook them. The eggs are beaten till frothy, the lightly cooked onions, tomatoes and chilies added to the mix with a pinch of salt, and the whole mixture thrown over a teaspoon of heated ghee in  a non-stick pan, The omelette is then turned over to be cooked on the other side. I guess I am one of those people who does not like the taste of raw eggs either. Most people cook the omelette on one side and fold it. The omelette is best eaten sizzling hot, mine has just arrived and is being put on my plate by our domestic help.Did I mention that my cholesterol levels are fine?  Happy eating…
